Recipe given to me by Donna Riley, Australia.
1 cup rolled oats
1 cup granulated sugar
1 cup all-purpose flour
¾ cup shredded coconut
½ cup chocolate chips
½ cup butter
4 tablespoons crunchy peanut butter
2 tablespoons boiling water
1 teaspoons baking soda
1 teaspoon honey
Preheat oven to 160C (325F).
Grease baking sheets.
In a bowl, mix oats, sugar, flour, coconut and chocolate chips together.
Melt butter, peanut butter and honey together.
In a small bowl, mix together baking soda and boiling water.
Add to butter mixture, then pour wet ingredients onto dry ingredients. Mix together.
Drop teaspoons of mixture onto baking sheets about 2 inches apart.
Bake 12-15 min.
Cool on sheets for 5 minutes before removing to wire racks to cool.
