5 hard cooked eggs
1 cup butter
1 cup granulated sugar
zest of 1 lemon
juice of ½ lemon
2 egg yolks
½ cup blanched, ground almonds
2-1/2 cups sifted all-purpose flour
1 egg white, beaten
mixture of finely chopped nuts and sugar (mix to taste)
Preheat oven to 350F.
Grease cookie sheet or line with parchment paper.
Press hard cooked eggs through a sieve; set aside.
Cream butter and sugar with lemon zest.
Add egg yolks, one at a time.
Add the hard-cooked eggs.
Add lemon juice.
Stir in nuts and the flour.
Break of small pieces of dough and roll into thin logs, about the ¼" thick.
Shape into rings and dip into the egg white, then into the nut/sugar mixture.
Place on cookie sheet about 2" apart.
Bake 15 minutes or until lightly brown.
