makes: 2 dozen
2-1/4 cups flour
½ cup powdered sugar
½ lb. butter
½ cup honey
1 egg, separated
1 cup sesame seeds
apricot, quince, or rose preserves
Preheat oven to 400°F.
Lightly grease cookie sheets or line with parchment paper.
Sift flour with powdered sugar; set aside.
Beat butter until fluffy.
Beat in honey.
Add the egg yolk.
Add dry ingredients.
In a separate bowl beat egg white just until slightly foamy.
Roll dough into 1" balls and place, if dough is too soft put it in the refrigerator for a few minutes.
Dip cookies in egg white and then roll in sesame seeds and place on cookie sheets about 2" apart.
Poke a hole in the middle of each cookie.
Bake about 12 minutes or until golden brown.
Transfer to wire racks.
While still warm, fill holes with preserves.
