¾ cup butter
½ cup granulated sugar
¾ cup brown sugar
1 cup sweet potato, cooked & mashed
1-1/2 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon ground cinnamon
½ teaspoon nutmeg
¾ cup quick cooking oatmeal
1 cup pecans
Beat butter and sugars until light and fluffy.
Beat in the sweet potato and the egg.
Stir in the flour, baking powder. cinnamon, nutmeg, and oatmeal.
Stir in the pecans.
Drop by teaspoons onto a greased cookie sheet.
Bake at 350°F for 10 to 12 minutes.
