Candied Citrus Peel Recipe

Peel fruit.  Place peel in a pot with lots of cold water.  Bring to a boil, then simmer 10 minutes.  Drain.  Scrape off white pith, then julienne the peel (cut into thin strips).  Heat 2 cups water and 1 cup granulated sugar.  When the sugar dissolves, add the peel.  Cover and simmer 45 minutes.  Drain, then cool peel for 45 minutes.  Toss peel with 1-2 cups granulated sugar.  Let dry overnight on a baking sheet.  Store in airtight container.
