Sweet Wontons

makes: 2 dozen

wonton wrappers
vegetable oil for deep-frying
powdered sugar for dusting

filling 1
1/2 cup chopped macadamia nuts
1 tablespoon finely chopped candied ginger
1/2 tablespoon lemon juice
1 teaspoon vanilla
1 tablespoon brown sugar

filling 2
1/4 cup dried sliced bananas
1/4 cup shredded coconut
1 teaspoon lemon zest
1 tablespoon lemon juice
1 tablespoon honey

In separate bowls, combine each of the filling ingredients.
Place about a teaspoon of filling in center of a wonton wrapper. (Keep remaining wrappers covered to prevent drying).
Brush edges of wrapper with water and fold wrapper in half to form a triangle.
Pinch edges to seal.
Pull two opposite corners together, moisten one corner, and overlap with the other corner; press to seal.
Cover filled wontons with a dry towel to prevent drying.
Fry wonton in deep hot oil (365F) for 2-3 minutes on each side or until golden.
Fry 2-3 at a time or oil temperature will drop and wontons will become greasy.
Place on paper towel to drain off any excess grease.
Dust with powdered sugar.
Serve warm or cold.
