Llanddarog Fair Cakes

Teisennau Ffair Llanddarog or simply fair cakes where brought to Llanddarog along with other cakes, cookies and bread to sell at the fair.

3/4 cup dried currants
1 cup dark beer
2-1/3 cups all-purpose flour
3/4 cups powdered sugar
1-1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon cloves
1 cup cold butter
powdered sugar

Soak currants in 1/2 cup beer for 15 minutes.
Preheat oven to 350F.
Lightly grease cookie sheets.
Sift together flour, powdered sugar, baking powder, baking soda, cinnamon, and cloves.
Rub butter into flour/sugar mixture.
Stir in 1/2 cup beer to make a soft dough, add more beer if necessary.
Roll out dough between two pieces of wax paper until 1/4" thick.
Carefully remove the top sheet of wax paper.
Cut into 2" x 3" rectangles and place on cookie sheets about 2" apart.
Drain currants and arrange on top of cookies.
Bake 15-20 minutes, or until edges start to brown.
Transfer to wire racks to cool.
Dust with powdered sugar.
