Overnight Cookies

type: refrigerator, formed
makes: 2-1/2 dozen

1 cup granulated sugar
1 cup butter
2 cups all-purpose flour
1/2 teaspoons baking soda
1 egg
1 teaspoons vanilla
options (choose 3):
1/4 cup toasted flaked coconut
1/4 cup peanut butter
1/4 cup currants or raisins
1/4 cup chopped nuts
1 teaspoon ground cinnamon mixed with 1 teaspoon ground nutmeg
1 ounce semi-sweet chocolate, melted

Melt butter.
Stir in sugar; once fairly incorporated set aside to cool slightly.
Sift flour and baking powder.
Beat egg into butter/sugar mixture.
Stir in vanilla.
Add flour/baking powder.
Divide dough into 3 sections.
Add one "option" to each section:
Roll each section into a log, wrap in wax paper.
Refrigerate overnight.
Preheat oven to 400F.
Lightly grease cookie sheets or line with parchment paper.
Slice logs into 1/8" thick pieces and place on ungreased cookies sheets about 1-1/2" apart.
Bake 7-10 minutes or until golden brown.
Transfer to wire racks to cool. The peanut butter cookies are fragile, let them cool on the cookie sheet 1 minute before transferring to the wire rack.
