This one is a delicate thin fried cookie dusted with cinnamon and sugar. type: formed makes: 16 4 eggs 1/4 cup granulated sugar 1 teaspoon vegetable oil 2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon salt 1/2 cup granulated sugar 6 tablespoons ground cinnamon vegetable oil for frying Combine 1-1/2 cups of the flour, the baking powder and the salt; set aside. In a large bowl combine eggs and the 1/4 cup of sugar. Beat until mixture is thick and lemon colored. Beat in the oil. Gradually add the dry ingredients. Turn dough out onto a floured board and knead until smooth using the remaining 1/2 cup of flour. Shape dough into sixteen balls. Roll each ball into a thin circle about 5" in diameter. Cut out a tiny circle from the center and slice slits radiating out from the center to the edge but do not pierce the center hole or the outer edge with the knife. Let stand uncovered on waxed paper for about 10 minutes. Combine cinnamon and 1/2 cup sugar; set aside. Heat oil in a deep fry pan to 350F. Fry cookies until golden brown on both sides. Drain on paper towels. Dust warm cookies with cinnamon/sugar mixture. |
