Originating in San Francisco's China Town, fortune cookies are a mainstay at any Chinese restaurant. type: drop makes: 8 1/4 cup all-purpose flour 2 tablespoon granulated sugar 1 tablespoon cornstarch pinch of salt 1 tablespoons vegetable oil 1 egg white 1 tablespoon water Write fortunes or any witty remark on 8 pieces of paper that measure roughly 3" x 1/4". In a bowl, sift flour, sugar, cornstarch, and salt together. Add oil and egg white. Stir until smooth. Stir in water. On a lightly greased skillet pour about 1 tablespoon of the batter; spread into a 3"-4" circle. Cook over low heat about 4 minutes or until very lightly browned. Turn and cook 1 minute more. Place cookie on a clean tea towel or potholder. Work very quickly; place the fortune in the center. Fold cookie in half and in half again draping cookie over the side of a bowl. Cool. |
