Spicy molasses cookies come in many forms, ginger men, ginger snaps to name a couple. These cookies originated in Massachusetts by a fisherman. They are suppose to be large. The lemon glaze is not traditional to the Joe Froggers it has been adapted from other molasses cookies. It add a nice zest to the flavor.
type: refrigerator, rolled makes: 3 dozen 4 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon ground nutmeg 1/2 teaspoon ground ginger 1/2 teaspoon ground cloves pinch of salt 1/2 cup vegetable shortening 1 cup light brown sugar 1/2 cup water 1 cup molasses 1 teaspoon cider vinegar 1/2 cup powdered sugar 1 teaspoon lemon extract 1-3 tablespoons water Sift the flour, baking soda, baking powder, nutmeg, ginger, cloves, and salt; set aside. Cream the shortening and sugar until smooth and fluffy. Gently beat in water, molasses, and vinegar. Add the dry ingredients. Cover and refrigerate 2 hour. Preheat oven to 375F. Lightly grease cookie sheets or line with parchment paper. Roll out dough between two pieces of wax paper until 1/4" thick. Carefully remove the top sheet of wax paper. Cut into 3" circles and place on cookie sheets about 2" apart. Bake 10-12 minutes or until firm to the touch. Transfer to wire racks to cool. Combine powdered sugar, lemon extract, and enough water to make glaze a spreadable consistency. Brush lemon glaze on top of cooled cookies.
