makes: 1-1/2 dozen 1 cup all-purpose flour 1/4 teaspoon baking powder 1/3 cup butter, room temperature 2/3 cup granulated sugar 1 egg 1 teaspoon vanilla 1-1/2 teaspoons lemon extract 1 tablespoon lemon zest yellow sugar crystals Preheat oven to 375F. Lightly grease cookie sheets or line with parchment paper. Sift together the flour and baking powder; set aside. Cream butter and sugar until fluffy. Beat in egg, vanilla, lemon extract, and lemon zest. Add the dry ingredients. Drop by the spoonful on to cookie sheets about 3" apart, these will spread so leave room. Sprinkle with sugar crystals.
