Oatmeal Lace

Use a thin metal spatula or your fingers to remove cookies from cookie sheets.

makes: 2 dozen

1 cup quick-cooking oats
1/4 all-purpose flour
1 teaspoon baking powder
pinch of salt
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 cup butter, room temperature
1 egg
1 teaspoon vanilla

Preheat oven to 325F.
Line cookie sheets with parchment paper.
Combine oats, flour, baking powder, and salt; set aside.
Cream butter with sugars until light and fluffy.
Beat in egg and vanilla.
Stir in dry ingredients.
Drop by small spoonful on to cookie sheets about 2-1/2" apart on an ungreased cookie sheet.
Bake 12-15 minutes or until edges begin to brown.
Transfer the cookies on the parchment paper to wire racks to cool completely.
