Reminiscent of the childhood favorite sandwich. type: refrigerator, formed makes: 30 1-1/4 cups all-purpose flour 3/4 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon salt 1/2 cup vegetable shortening 1/2 cup peanut butter, creamy or crunchy 1/2 cup granulated sugar 1/2 cup packed brown sugar 1 egg 1 teaspoon vanilla granulated sugar 1/2 cup of your favorite jelly Combine flour, baking soda, baking powder, and salt; set aside. Cream together shortening and peanut butter. Cream in the sugars. Beat in the egg and vanilla. Gradually add the dry ingredients. Cover and refrigerate 1 hour. Preheat oven to 375F. Grease cookie sheets. Roll the dough into 1 inch balls and roll in granulated sugar. Place about 2 inches apart on cookie sheets. Bake 10 minutes. Cool on wire rack. As soon as the cookies are out make and indentation in the middle of each cookie (you can use the back of a teaspoon). Fill each indentation with slightly heaping 1/4 teaspoon jelly. Bake cookies 5 minutes more, or until golden. Transfer cookies to wire racks to cool. |
