Pumpkin-Chocolate Chip Cookies

5 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoons nutmeg
1/2 teaspoon salt
3 cups granulated sugar
1 cup vegetable oil
2 eggs
1 teaspoon vanilla
29 ounce can pureed pumpkin (not pumpkin pie filling)
12 ounces chocolate chips

Preheat oven to 350F.
Grease a cookie sheet.
Sift together flour, baking powder, baking soda, cinnamon, nutmeg and salt, set aside.
Beat sugar, vegetable oil, eggs and vanilla together.
Add pumpkin and the dry ingredients alternately to the mixture.
Fold in chocolate chips.
Drop by teaspoonfuls onto cookie sheet.
Bake 10 minutes or until edges are set.

he Cookie Tin
This is a moist chewy cookie even though there is a lot of pumpkin in there, there is just a hint of pumpkin.  Tasty although I recommend adding more of the spices.
