This is Pennsylvania Dutch. type: drop makes: 1 dozen 2 cups all-purpose flour 5 tablespoons unsweetened cocoa powder pinch of salt 1 teaspoon baking powder 1/2 cup vegetable shortening 1 cup granulated sugar 2 egg yolks 1 teaspoon vanilla 1/2 cup milk filling 1/2 cup vegetable shortening 1 cup powdered sugar 1 cup marshmallow topping 1/2 teaspoon vanilla milk Preheat oven to 350F. Sift flour, cocoa, baking soda, and salt together; set aside. Cream 1/2 cup shortening and granulated sugar until fluffy. Beat in egg yolks, vanilla, and milk. Add the dry ingredients. Drop by the spoonful on to cookie sheets about 2" apart. Bake 12-15 minutes. Transfer to wire racks to cool. Cream together 1/2 cup shortening and powdered sugar. Add the marshmallow topping and vanilla. Add enough milk to make filling spreadable. When cookies are cool, spread the filling between two cookies to make a sandwich. |
