Rosette irons are needed for these beautiful cookies. There are several interchangeable shapes for these cookies. For a little kick add 1/2-1 teaspoon of your favorite spice. Blend in flour. Let stand 10 minutes. Pour oil 2" deep in a saucepan. Heat oil to 375F. Place rosette iron into hot oil for 1 minute. Gently shake off excess oil. Immediately dip into batter, don't let the batter come over the top edge of the iron or the batter may not be able to release form the iron. Immerse batter-covered iron into hot oil. Gently, shake iron to loosed batter, be sure to keep batter in the oil. Fry about 1 minute or until golden. Remove with a slotted spoon and drain on paper towels. Re-heat iron in hot oil each time.
