Biscoitos de Maizena

Cornstarch cookies

type: formed
makes: 3 dozen

2 cups cornstarch
pinch of salt
1 cup granulated sugar
1 egg
1/4 teaspoon vanilla
3/4 cup butter

Preheat oven to 375F.
Lightly grease cookie sheets or line with parchment paper.
Beat egg and vanilla.
Add the cornstarch, salt, and sugar.
Cream in the butter.
Let rest 15 minutes.
Roll dough into walnut size balls and place on cookie sheets about 2" apart.
With a fork dipped in flour, flatten each cookie, leaving a crisscross pattern into the top.
Bake 5-7 minutes or until lightly colored.
Transfer to wire racks to cool.

The recipe is very simple, easy and delicious. The cookie ends up dried and delicate, sort of soft crunchy. A very popular cookie here. Maybe Julie added to much milk? :)
