Add salt, sugar, orange juice concentrate, and ice water. Roll out on a sugared surface, fold in half, and roll out again. Repeat this procedure two more times. Cover dough and refrigerate for 30 minutes. This time roll out on a sugared surface until very thin, 1/8" thick. Cut into diagonal strips and cut a slit down the center of each cookie. Heat oil in a deep pan to 375F. Fry cookies a few at a time until golden. Drain on paper towels. Sprinkle warm cookies generously with sugar. |
