Trinidad Coconut Cakes

1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
6 tablespoons butter
1/2 cup granulated sugar
2 cups shredded coconut
1/2 teaspoon vanilla
1 egg

Preheat oven to 400F.
Lightly grease cookie sheets or line with parchment paper.
Sift flour, baking powder, cinnamon, and sugar.
With clean hands, rub in butter until mixture resembles fine breadcrumbs.
Stir in coconut.
Beat in egg and vanilla, dough will be stiff.
Roll dough into golf ball-sized spheres and place on cookie sheets about 2" apart.
Bake 5-10 minutes or until lightly browned.
Transfer to wire racks to cool.

I made these for my son's class as part of the geography lesson and they were a big hit. The 3-5 year olds helped me make the cookies and they loved the taste. The teacher asked me to make them again for parents night.
