Potato Cookies

makes: 2 dozen
1-1/4 cups all-purpose flour
1 teaspoons baking powder
pinch of salt
1/4 cup butter
1/8 cup granulated sugar
1 teaspoon lemon zest
1/2 teaspoon nutmeg
1/8 cup honey
1 egg
1/2 cup grated, raw sweet potatoes
3/4 cup powdered sugar
1 tablespoon lemon juice
1 tablespoon water
Preheat oven
to 350F.
Sift the flour, baking powder, and; set aside.
Cream the butter and sugar.
Mix in the lemon zest, nutmeg, honey, and egg.
Stir in the grated sweet potato.
Blend the flour mixture into the sweet potato mixture.
Drop by the spoonful on to cookie sheets about 2"
apart on an ungreased cookie sheet.
Bake 7-10 minutes or until lightly browned.
Transfer to wire racks to cool.
To make glaze, combine powdered sugar with lemon juice
and water.
Spread the glaze on the cooled cookies.

I was looking for a recipe for sweet potatoes
which my 80 year old grandmother loves. I found this
cookie recipe and tried it. My additions were two
tablespoons of peanut butter and some pecans. Family
came over unannounced that Sunday. All the cookies were
gone. I am making this recipe again today at the request of
about 5 family members who said they woke in the morning
wanting a cookie with a cup of coffee. The lemon glaze
was topped with additional powdered sugar and it tastes like
a Danish treat. Thanks for the wonderful recipe.
