make: 2 dozen
2 cups all-purpose flour
1 teaspoon baking powder
pinch of salt
1 cup butter, room temperature
1 cup granulated sugar
1 teaspoon vanilla
4 eggs
1 cup finely chopped toasted almonds, optional
6 cups powdered sugar
2/3 cup unsweetened cocoa powder
2 teaspoons vanilla extract
11 tablespoons milk
Preheat oven to 375F.
Liberally grease 9" x 13" pan.
Combine flour, baking powder, and salt; set aside.
Cream butter and sugar.
Add vanilla.
Gradually add eggs and mix well.
Slowly add the dry ingredients.
Fold in almonds.
Pour batter in pan.
Bake about 15-20 minutes or just until a toothpick inserted in the
center comes out clean.
Place baking pan on wire rack to cool.
Once cool remove form pan and cut into squares.
In a large bowl, whisk together powered sugar and cocoa until no lumps
remain.
Add vanilla and 4 tablespoons milk.
Add enough of the remaining milk to make a smooth and creamy.
Pour mixture on top of cookies.
Sprinkle tops with coconut.
Refrigerate until set.

Just for the record, lamingtons are not biscuits/cookies- they are cake dipped in the special chocolate icing and rolled in coconut. You can make lamingtons from butter cake, vanilla cake etc- even shop bought cake or packet cake mix. For pink lamingtons, make up a raspberry or strawberry
jelly (jello) as per instructions. When the mixture is cool (NOT set) dip the cake squares QUICKLY in the mixture (if you leave it in the mix for any length of time it will go soggy) and then roll in coconut.
