Irish Soda Cookies

type: rolled
makes: 3 dozen

2 cups all-purpose flour
3/4 cup granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1/2 cup butter
1/2 cup currants or raisins
1/4 cup buttermilk
1 egg, slightly beaten
1 teaspoon caraway seeds

Preheat oven to 350F.
Lightly grease cookie sheets or line with parchment paper.
Combine flour, sugar, baking powder, baking soda, and salt.
Cut in butter until mixture resembles coarse meal.
Stir in currants.
Blend in egg.
Add buttermilk and mix to make a soft dough, use more buttermilk if needed.
Knead 5 to 6 times.
Roll out on a lightly floured board until 1/4" thick.
Cut into triangles and place on cookie sheet 2" apart..
Bake 12-14 minutes or until golden brown.
Transfer to wire racks to cool.
