Abernathy Biscuits

type: rolled
makes: 2-3 dozen

5-1/2 cups all-purpose flour
1- 1/2 cups granulated sugar
1- 1/2 teaspoons baking powder
1- 1/2 cups shortening
3 eggs
3 tablespoons milk
3 tablespoons caraway seeds
1- 1/2 teaspoons lemon zest

Preheat oven to 375F.
Lightly grease a cookie sheet.
Combine flour, sugar and baking powder. Cut in the shortening until the mixture resembles coarse crumbs.
In another bowl, beat eggs, milk, seeds and lemon zest until blended well.
Add to the dry ingredients and blend until smooth.
On a floured surface, roll dough out 1/4 inch thick and cut using a 2 inch round cutter and place on cookie sheet 2 inches apart.
Bake 7 to 10 minutes until edges are lightly browned.
