Scottish Shortbread

type: rolled
makes: 2 dozen

1 cup butter
1/2 cup powdered sugar
1 egg yolk
1 teaspoon vanilla
pinch of salt
1-1/2 cups all purpose flour
1/2 cup rice flour
sugar crystals

Cream butter.
Cream in sugar until light and fluffy.
Beat in egg yolk, vanilla, and salt.
Gradually add in the flours.
Turn dough out on to lightly floured board.
Roll dough to 1/4" thick.
Cut out shapes with a cookie cutter and place on an ungreased cookie sheet about 2" apart..
Sprinkle with sugar crystals.
Bake 10-12 minutes or until edges are slightly brown.
Transfer to wire racks to cool.
