Pice
ar y Maen (Welsh Cakes)
Ovens were not
common in Wales, so many pastries were cook on
the griddle--like these, Pice ar y Maen or Welsh
Cakes.

2 cups granulated sugar
1 egg, beaten
1/2 cup butter
1/4 cup plus 2 tablespoons milk
2 cups cake flour
1 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon allspice
1/2 teaspoon salt
1/2 cup currants
In large bowl
mix half of the sugar with the egg and butter.
Add milk and mix until well combined.
Add flour, remaining sugar, baking powder, nutmeg,
cinnamon, allspice, and salt.
Mix well.
Stir in currants.
Chill dough.
Turn out dough on a lightly floured surface and roll a 1/4"
thick.
Cut into 2' rounds.
Heat griddle (or saucepan) and butter lightly.
Cook cakes until golden brown and edges are firm.
Turn and cook other side.
