2 cups all-purpose flour
1/2 teaspoons baking soda
1 egg
1 teaspoons vanilla
options (choose 3):
1/4 cup toasted flaked coconut
1/4 cup peanut butter
1/4 cup currants or raisins
1/4 cup chopped nuts
1 teaspoon ground cinnamon mixed with 1 teaspoon

Divide dough into 3 sections.
Add one "option" to each section:
Roll each section into a log, wrap in wax paper.
Refrigerate overnight.
Preheat oven to 400F.
Lightly grease cookie sheets or line with parchment paper.
Slice logs into 1/8" thick pieces and place on
ungreased cookies sheets about 1-1/2" apart.

The Cookie Tin
Pretty good cookie, the best part is
that they are fairly quick and great to
have on hand and cook up fresh and warm.
