Langues de Chat
Language of cats or cats' tongue.

type: piped
makes: 4 dozen

1/2 cup + 1 tablespoon butter, room temperature
1-1/4 powdered sugar
1-1/2 cups all-purpose flour
2-3 large egg whites
1/4 teaspoon vanilla
8 ounces bittersweet chocolate, roughly chopped
1 tablespoon corn syrup
1 cup chopped pistachios

Preheat oven to 350F.
Lightly grease cookie sheets or line with parchment paper.
Sift the flour and sugar together.
Cream butter.
Beating constantly add in the flour/sugar mixture.
Stir in the vanilla.
Beat 2 egg whites until stiff, but not dry.
Carefully fold whites in to butter/flour mixture.
Batter should be soft, grainy, and rough. If batter is not soft enough add another egg white.
Transfer the batter to a large pastry bag fitted with a large, round, plain tip.
Pipe batter onto cookie sheets into strips about 3-1/2" to 4" in length.
Bake 8-10 minutes or until edges begin to turn golden brown.
Transfer to wire racks to cool.
They will become crisp as they cool.
Melt chocolate with corn syrup in a double boiler.
Spread half of cookies with a thin layer of chocolate and top with another cookie.
Dip tips of each cookie into chocolate and roll in the pistachios.
Let dry on wax paper.
