Tuiles

Tuiles is French for tiles. The finished cookies resemble French roofing tiles. These cookies harden quickly so it is best to only do only 4 at a time.

type: drop
makes: 2 1/2 dozen

3 large egg whites
3/4 cup powdered sugar
1/2 cup all-purpose flour
6 tablespoons butter, melted
3/4 teaspoon vanilla extract
1/4 teaspoon salt
1 cup sliced almonds
wine bottle

Preheat oven to 350F.
Heavily grease cookie sheets as well as rolling pins, wine bottles, or jar (these may be covered with wax paper).
Beat egg whites, powdered sugar, and flour until blended and smooth.
Beat in melted butter, vanilla extract, and salt.
Drop by the spoonful on to cookie sheets about 6" apart.
With small spatula, spread each cookie to a 3" round.
Cover each cookie with some almonds.
Bake 5-7 minutes or until edges are golden.
Working quickly, remove cookies with a large spatula and drape over wine bottles.
If cookies become too hard to shape, return cookie sheet to oven for 1-2 minutes to soften cookies slightly.
Repeat procedure with remaining batter.
When cooled remove form wine bottles.
