Cookies
type: refrigerator, rolled
makes: 2 dozen
8 tablespoons butter, room temperature
1/2 cup light brown sugar
1 tablespoons orange zest
pinch of salt
1 egg
1-3/4 cups all-purpose flour
1-1/2 cup powdered sugar
2 tablespoon orange juice concentrate
1 tablespoons lemon juice
1/4 cup grated dark chocolate
1/4 cup chopped pistachios
Cream butter,
sugar, orange zest, and salt until light and fluffy.
Beat in egg.
Add the flour and beat until dough just combines.
Divide the dough, flatten each half into a 6" circle.
Wrap in plastic wrap and chill for 2 hours.
Preheat oven to 375F.
Lightly grease cookie sheets or line with parchment paper.
Roll out each circle of dough between two sheets of
lightly floured waxed paper until at least 1/4"
thick.
Carefully peel off the top piece of wax paper.
Cut out shapes with cookie cutter and place on cookie
sheet about 2" apart.
If dough get to soft to handle or difficult to remove
from wax paper, place in refrigerator for a few minutes.
Bake 8-10 minutes or until lightly brown around edges.
Transfer to wire racks to cool.
Mix together the powdered sugar, orange juice, and lemon
juice until smooth.
Stir in the grated chocolate.
Brush glaze on top of warm cookies.
Sprinkle with pistachios.
