Springerle

These are made with a special rolling pin, a springerle, that has designs carved into the roller. However, these can be made with a regular rolling pin.

type: rolled
makes: 3 dozen

1 pound powdered sugar
1 teaspoon baking powder
1 teaspoon orange zest
1 teaspoon lemon zest
3 cups all-purpose flour
4 eggs

In a bowl, sift together powdered sugar, baking powder, orange and lemon zest, and 1 cup of the flour; set aside.
Whisk eggs until very light.
Add dry ingredients.
Mix well.
Work in rest of flour to make soft dough.
Turn out on flour board.
Roll out dough on a floured surface to 1/4" thickness.
Then roll again with a springerle roller, cut out the cookies where the marked outlines shown or cut into 1-1/2" x 2" rectangles.
Lay out on lightly floured cloth.
Let set about 2 hours to dry tops.
Preheat oven to 250F.
Grease cookie sheet.
Place cookies in cookie sheet and bake for 20 minutes or until bottoms are golden.
