Pretzels
type: refrigerator, formed
makes: 2 dozen
1-1/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
pinch of salt
1/2 cup butter
2/3 cup granulated sugar
1 egg
1 teaspoon vanilla
beaten egg white
coarse sugar crystals
Sift together
flour, cocoa powder, baking powder, and salt.
Cream butter and sugar until light and fluffy.
Add egg and vanilla.
Gradually add in flour.
Shape dough into 2 logs.
Wrap each in plastic wrap and refrigerate 1 hour.
Preheat oven to 375F.
Lightly grease cookie sheets or line with parchment paper.
Cut dough into 12 equal portions.
Roll each portion into a thin rope, about 9"-10"
long.
Transfer ropes to cookie sheet one by one.
Bring each end around to meet in the center.
Twist the ends together.
Gently press ends into the middle of the rope forming a
pretzel.
Brush each cookie with beaten egg white.
Sprinkle with the coarse sugar crystals.
Bake 10-12 minutes.
Let cool on cookie sheet 2-3 minutes then transfer
cookies to wire racks to cool completely.
