Cinnamon
"Stars". These are a delicate, flour-less
star-shaped cookie.
type: rolled
makes: 35
1/2 pound blanched almonds
2 egg whites
pinch of salt
1/3 lb. powdered sugar
1/2 tablespoon lemon juice
1 teaspoon ground cinnamon
granulated sugar
Preheat oven to 325F.
Line cookie sheets with parchment paper.
Grease the parchment paper.
To blanch almonds, place in boiling water for 30
seconds
Run almonds
under cold water.
Place in clean tea towel and rub off the skins.
Place almonds in a food processor and grind into a fine
meal.
Add the cinnamon to the almonds and stir; set aside.
Whip egg whites with salt until stiff peaks form.
Continue whipping and add the powdered sugar.
Continue whipping and pour the lemon juice in gradually
Remove about 1/4 of the mixture, cover, and set aside.
Fold the almond/cinnamon mixture into the egg mixture.
Sprinkle a board with some granulated sugar.
Working with small portions, place dough on board. Dough
breaks easily.
Roll out dough or press to 1" thick.
Cut out stars, the dough is difficult to re-roll so cut
as many stars as possible the first time.
Place the stars on cookie sheet about 2" apart.
Brush each star with the reserved egg mixture.
Bake cookie sheets one at a time for 25 minutes.
Remove from baking sheet and cool on a rack.
