makes: 2 dozen

1/2 cup butter
1 cup granulated sugar
1 egg, separated
2 cups all-purpose flour
1/2 cup chopped cashews

Preheat oven to 375F.
Lightly grease a 9" square baking pan.
Beat together butter, sugar and egg yolk.
Gradually add in the flour.
Spread dough evenly into the bottom of the pan.
Beat egg white until just stiff, fold in cashews.
Spread on top of the dough.
Bake 10-15 minutes or until firm to the touch on top.

I have been making these cookies for years and almonds really should be used, not cashews.
