Moravian [moh-RAY-vee-uhn] cookies are traditional
Christmas cookies in Moravia, Czechoslovakia.
Czechoslovakian immigrants settling in North
Carolina brought this cookie to the United
States.
type: rolled
makes: 3 dozen
4 tablespoons butter
1/2 cup molasses
1/4 cup dark brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
pinch ground allspice
pinch of ground nutmeg
1/2 teaspoon baking soda
1/4 teaspoon baking powder
2 cups all-purpose flour
Melt butter
over low heat.
Add molasses and brown sugar.
Transfer mixture to a bowl and let cool for 5 minutes.
Stir in the cinnamon, ginger, cloves, allspice, and
baking soda.
Gradually add the flour and mix until just blended.
Shape dough into a flat circle and wrap with plastic wrap
Let dough rest at room temperature for 1 to 2 hours.
Preheat oven to 350F.
Lightly grease cookie sheets or line with parchment
paper.
Roll out the dough between two pieces of wax paper until
very thin 1/16" in thickness.
Cut out cookies in various shapes and place on cookie
sheet about 2" apart.
Bake 8-10 minutes or until lightly brown.
Transfer to wire racks to cool.
