Kourabiedes
Delicate, buttery almond cookies with a sugar coating.

makes: 2 dozen

1/2 lb. butter, room temperature
1/2 cup powdered sugar
1 egg yolk
2 teaspoons brandy
1/4 teaspoon baking powder
2-1/4 cups all-purpose flour
1/2 cup toasted, ground almonds
2 oz. bittersweet chocolate, grated
powdered sugar for dusting

Preheat oven to 350F.
Cream butter.
Gradually add powdered sugar, egg yolk, and brandy.
Add baking powder.
Add flour, slowly, 1 cup at a time.
Fold in ground almonds and grated chocolate.
Using about 1 tablespoons of dough, roll into logs then bend into crescents.
Place on an ungreased cookie sheet about 1 1/2" apart.
Bake about 20 minutes or firm. Cookies should not brown.
Roll cookies in powdered sugar.
Place on wire racks to cool.

The Cookie Tin
What a taste treat. They were so-so warm - but cold they are just yummy. Serve with coffee for a real treat. The bitter chocolate scattered throughout the cookie is a nice surprise
