Hawaiian Mood Cookies

makes 2-1/2 dozen

1/4 cup shredded coconut
1 cup all-purpose flour
1 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon of salt
1/4 cup butter
1 1/2 ounce regular cream cheese
1 teaspoon vanilla
1/2 cup granulated sugar
1 egg
1/2 cup crushed pineapple, drained
1/4 cup chopped maraschino cherries, drained

Preheat oven to 350F.
Lightly grease cookie sheets or line with parchment paper.
Spread coconut on a microwave safe plate and microwave for 15 seconds; set aside.
Sift together flour, baking powder, baking soda, and salt; set aside.
Cream butter, cream cheese, and vanilla together.
Cream in the sugar.
Add eggs.
Gradually add dry ingredients.
Stir in pineapple, cherries, and coconut.
Drop by the spoonful onto cookie sheets about 2" apart.
Bake about 12-15 minutes or until lightly browned.
Transfer to wire racks to cool.
