Hojuelas
type: refrigerator, rolled
makes: 2 dozen
1/2 cup butter, cold
3 cups all-purpose flour
pinch of salt
1 tablespoon granulated sugar
5 tablespoons orange juice concentrate
3 tablespoons ice water
vegetable oil for frying
powdered sugar
Combine the flour and butter and rub together with clean hands
until well combined and the size of peas.
Add salt, sugar, orange juice concentrate, and ice water.
Roll out on a sugared surface, fold in half, and roll out again.
Repeat this procedure two more times.
Cover dough and refrigerate for 30 minutes.
This time roll out on a sugared surface until very thin,
1/8" thick.
Cut into diagonal strips and cut a slit down the center of each
cookie.
Heat oil in a deep pan to 375F.
Fry cookies a few at a time until golden.
Drain on paper towels.
Sprinkle warm cookies generously with sugar.
