12 tablespoons butter
1-1/4 cups all-purpose flour
1 cup brown sugar
1-1/4 cups quick-cooking oats
1 teaspoon baking soda
pinch of salt.
1/4 pound pitted dates, finely chopped
1/4 pound bittersweet chocolate
1/2 cup granulated sugar
1/4 cup rum
3/4 cup orange juice
1/2 cup Brazil nuts, chopped finely
In a
saucepan, over medium-low heat, combine dates, chocolate,
sugar, rum, orange juice, and nuts.
Cook until dates have softened, about 15 minutes.
Preheat oven to 350F
Lightly grease a 8" square baking pan.
Melt butter.
Stir in flour, sugar, oats, baking soda, and salt.
Put half of the oat mixture into the baking pan, spread
out evenly.
Spread date mixture on top.
Cover date mixture with the remaining oat mixture.
Bake 10-12 minutes.
Cool in pan on a wire rack.
When cool, cut into bars.
