Bird's Nest

makes: 3 dozen
1 cup vegetable shortening
1 cup brown sugar
2 eggs, separated
2 teaspoon vanilla
pinch of salt
2 cups all-purpose flour
1/2 cup finely chopped pecans, almonds, or walnuts
jam and/or mini-chocolate chips
Preheat oven to 350F.
Cream shortening and sugar until light and fluffy.
Beat in egg yolks, vanilla, and salt.
Gradually add flour.
Mix well and compress into a ball.
Roll dough into walnut size balls.
Whisk egg whites in a shallow bowl until foamy.
Place chopped nuts in another shallow bowl.
Dip each ball in egg whites, coat ball completely.
Then, roll balls in finely chopped nuts.
Place on ungreased cookie sheets about 2" apart.
With your finger, make indentation in center of each cookie.
Fill the well with a drop of jelly or a few mini-chocolate
chips.
Bake 15-20 minutes or until lightly browned.
Transfer to wire racks to cool.
