Napoleonhattar

These are cute cookies that look just like Napoleon's Hat. To add a little interest tint the almond filling with a drop of food coloring.

type: refrigerator, rolled
make: 3 dozen

2 cups all-purpose flour
1/2 teaspoon baking powder
pinch of salt
3/4 cup butter
1/2 cup granulated sugar
2 eggs, separated
1 teaspoon vanilla
1/4 teaspoon lemon extract
1/3 cup powdered sugar
1/4 teaspoon cream of tartar
1 cup ground almonds
powdered sugar for dusting

Combine flour, baking , powder, and salt, set aside.
Cream butter.
Add sugar and cream until fluffy.
Beat in egg yolks, vanilla, and lemon extract.
Gradually add in the dry ingredients.
Cover and refrigerate 1 hour.
Meanwhile, make the filling.
Sift powdered sugar.
In a bowl, beat egg whites with cream of tartar to form soft peaks.
Slowly add powdered sugar and beat until stiff peaks form.
Fold in ground almonds.
Preheat oven to 375F.
Roll out dough between two pieces of wax paper until 1/8" thick.
Carefully remove the top sheet of wax paper.
Cut into 3" circles.
Place about 1 rounded teaspoon of the filling in center of each circle.
Fold up and pinch three sides to form a three cornered hat (like Napoleons), leave the top of filling exposed.
Place 2" apart on an ungreased cookie sheet.
Bake 10-12 minutes or until golden brown.
Transfer to wire racks to cool.
Sprinkle with powdered sugar.
