Pepparkakor
These are often shaped into many kinds of shapes, especially
pigs.
type:
refrigerator, formed
makes: 2 dozen
1/2 cup light brown sugar
1/2 cup light molasses
1/2 cup butter
1/2 tablespoon ginger
1 teaspoon cinnamon
1/8 teaspoon cloves
1 egg, beaten
1/2 tablespoon baking soda
1/8 teaspoon salt
2-1/2 cups sifted all-purpose flour
In a saucepan, heat sugar, molasses, butter, ginger, cinnamon,
and cloves.
Gently bring to a boil, stirring constantly, then immediately
move from the heat.
Let cool.
Whisk eggs, baking soda, and salt into molasses mixture.
Re-sift flour into batter.
Shape dough into 2 logs, about 8" long.
Wrap in plastic wrap and refrigerate at least 1 hour or
overnight.
Preheat oven to 350F.
Slice logs into thin circles, about 1/8" thick.
Place cookies on ungreased cookies sheets about 2" apart.
Bake 8-10 minutes or until lightly browned.
Transfer to wire racks to cool.

Great!! Cut them real thin and they will drive everyone nuts. The kids ate them all before I could store them.
