Joulutortut
These are charming cookies shaped like windmills and filled with
prune puree or plum jam.
type: refrigerator, rolled
makes: 2 dozen
7 oz butter, cold
1/3 cup granulated sugar
pinch of salt
1/3 cup cold water
1 teaspoon vinegar
1 cup all-purpose flour
3/4 cup pitted and chopped prunes
1/4 cup granulated sugar
1/4 cup water
1 tablespoon orange or lemon juice
1 egg
course sugar crystals
Beat together butter, sugar, salt, water, and vinegar.
Gradually add flour.
Cover and refrigerate for 30-60 minutes.
Meanwhile, combine prunes, sugar, water, and orange juice over
medium-low heat.
Cook about 10 minutes, remove from heat and let cool.
Puree prune mixture in a food processor or mash with the back of
a wooden spoon
Preheat oven to 375F.
Lightly grease cookie sheets or line with parchment paper.
Roll out on a floured board, fold, roll out again, fold and roll
2 more time.
The final thickness should be 1/8 of an inch.
Cut the sheet into 2" squares.
Place the squares on baking sheets about 2" apart.
Make a 1/2" cut with a knife or pastry wheel from each
corner towards the center.
Place a little of the filling in the middle of each square.
Fold over every other corner and fold it towards the center,
forming a windmill-like shape.
Brush dough with beaten egg
Sprinkle with sugar crystals.
Bake 8-12 minutes or until golden brown.
Let cool on cookie sheet 2 minutes then transfer cookies to wire
racks to cool completely.
