Butter Brickle Cookies
Almond brickle
bits can be found in the baking section of most
supermarkets by the chocolate chops.
type: shaped
makes: 4 dozen
1/2 cup peanut butter
1 cup butter or margarine
1 cup granulated sugar
2 cups light brown sugar
1 egg
1 teaspoon vanilla
1-1/2 cups all-purpose flour
1/2 teaspoon baking soda
6 ounces almond brickle bits
Preheat oven
to 350F.
Grease cookie sheet.
Beat peanut butter, butter, and both sugar until creamy.
Beat in egg and vanilla.
Stir in flour and baking soda.
Stir in brickle bits.
Roll dough into walnut sized balls and place on cookie
sheet about 2" apart.
Place wax paper over cookie and flatten them with your
hand or the bottom of a glass; remove wax paper.
Bake 7-9 minutes or until edges are very light brown.

When I flattened this cookie
as the recipe calls for it ended up with
the cookies taking over the whole cookies
sheet. When I just left them the size of
walnuts they came out just fine. Very
tasty but don't think I would make them
again.
