4 egg whites
1-3/4 cups granulated sugar
1 teaspoon grated orange peel
1/2 teaspoon baking powder
1-1/2 cup ground almonds
1-3/4 cup all-purpose flour
Preheat oven
to 325F.
Grease and flour cookie sheets.
Beat egg whites, sugar, orange peel and baking powder
until blended.
Gradually add ground almonds and flour, beating until
mixture is thoroughly mixed.
Cover and chill until firm enough to handle.
Lightly flour your hands and pinch off about 3
tablespoons of dough.
Roll into an 8 inch long rope.
Cut rope in half; roll each half out to 8 inches again.
Fold 1 inch of each end back onto rope and pinch ends to
make bone-end shapes. Repeat with remaining dough.
Place bones about an inch apart cookie sheets.
Bake 20 minutes or until cookies are lightly browned on
bottoms.
Transfer cookies to wire racks to cool.
