Chip Meringue Cookies

makes: 2 dozen
4 egg whites
1/2 teaspoon salt
1/2 teaspoon cream of tartar
1 cup granulated sugar
2 cups mini chocolate chips
Preheat oven
to 300F.
Grease baking sheets.
Beat egg white, salt and cream of tarter to soft peaks.
Gradually sugar until peaks are stiff.
Gently fold in chocolate, a little at a time.
Drop by tablespoon onto baking sheets.
Bake 20-23 minutes or until crisp and dry.
Let stand 2 minutes, remove from pan to wire racks and
cool completely.

Excellent! A big hit with my cookie
exchange friends. I'd recommend semi-sweet chocolate
chips. And it definitely made TWICE as many as stated.
