makes 2 dozen
2-1/4 cups all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon allspice
1 1/4 teaspoons ginger
1 1/2 teaspoons ground cinnamon
1 cup apple juice concentrate
2/3 cup raisins
2 egg whites
1/4 cup vegetable oil
Combine flour,
baking powder, baking soda, and spices, set aside.
Place apple juice concentrate and raisins in a blender or
food processor and puree.
Add egg white and pulse until blended.
Add the egg whites and beat on slow speed just until
combined.
Gradually add the mixture alternating with the oil to the
dry ingredients.
Wrap dough in waxed paper and refrigerate 2 hours.
Preheat oven to 375F.
Line cookie sheet with parchment paper.
Shape dough into walnut-sized balls.
Place on cookie sheet and flatten with fork.
Bake 8 to 10 minutes or until just done.
Cool on wire rack.
