makes: 5 dozen
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup packed brown sugar
1/2 cup margarine or butter
1 egg
1 teaspoon vanilla
1/3 cup chopped maraschino cherries
1/2 cup raisins
1/3 cup crushed pineapple, drained
1/3 cup coconut
1/3 cup chopped walnuts
Preheat oven
to 375F.
Grease cookie sheets.
Combine flour, baking powder, baking soda, and salt; set
aside.
Cream brown sugar and margarine.
Add egg and vanilla and mix until fluffy.
Add cherries, raisins, pineapple, coconut and nuts, mix
well.
Add the dry ingredients.
Drop by the teaspoon on to cookie sheet about 2 inches
apart.
Bake 10-12 minute or until lightly browned.
Remove cookies immediately to cooking racks.
