Wadacke Cookies

3 to 3-1/2 cups all purpose flour
½ teaspoon baking soda
¼ teaspoon salt
½ cup molasses
¼ cup + 2 tablespoons vegetable oil
2 egg whites
1 teaspoon vanilla
½ cup butter
2 chopped up chocolate bars
¾ cup granulated sugar
⅔ cup brown sugar
1 teaspoon ground ginger

Preheat oven to 350F. Lightly grease cookie sheets or line with parchment paper. Combine flour, baking soda, and salt. Add the molasses, vegetable oil, egg whites, and vanilla. Mix in dry ingredients and butter. Fold in chocolate. Add the sugars and ginger. Drop from a teaspoons onto cookie sheet about 1-1/2" apart. Bake 7-10 minutes or until golden brown. Transfer to wire racks to cool.
