Danish Butter Cookies

makes 24 

1 cup butter, softened
3/4 cup granulated sugar 
1/4 teaspoon salt 
1 egg, room temperature 
1-1/2 teaspoon vanilla extract
2 cups all-purpose flour 
white coarse sugar

Line two baking sheeting with parchment paper or silicone baking mats. Beat butter and sugar until light and fluffy, about 3 minutes. Mix in salt, egg, and vanilla. Mix in salt. Add flour 1 cup at a time, until completely combined. Transfer dough to a piping bag fitted with a large star tip. Pipe the dough into 2-inch circles onto the parchment paper or silicone baking mats. Sprinkle with coarse sugar. Refrigerate cookies 30 minutes. This will help them from spreading while baking. Preheat the oven to 350 degrees. Bake cookies for 12-15 minutes, until the edges are just lightly golden. Let cool on a pan 5 minutes, then transfer to a cooling rack to cool completely.
